20 oz can
crushed pineapple
drained very well
1
9 oz jar
macadamia nuts
chopped
1
cup
coconut
¾
cup
flour
sifted before measuring
½
tsp
baking powder
¾
cup
sugar
3
eggs
large
1
tsp
vanilla
Instructions
Grease three 5x3 loaf pans and line bottom with wax paper
Heat oven to 300°
Mix pineapple, nuts and coconut in a large bowl
Sift flour and baking powder over nut mixture.
Add sugar and mix gently until nuts and fruits are well coated.
Beat eggs in small bowl until foamy.
Spoon in prepared pans and bake 60-70 minutes.
Remove from oven adn turn out loaves into wire racks to cool.
Wrap in plastic wrap or foil. Keep 4 days before eating, either in frig or freezer.
