Macadamia Nut Bread

Ingredients
  

  • 1 20 oz can crushed pineapple drained very well
  • 1 9 oz jar macadamia nuts chopped
  • 1 cup coconut
  • ¾ cup flour sifted before measuring
  • ½ tsp baking powder
  • ¾ cup sugar
  • 3 eggs large
  • 1 tsp vanilla

Instructions
 

  • Grease three 5×3 loaf pans and line bottom with wax paper
  • Heat oven to 300°
  • Mix pineapple, nuts and coconut in a large bowl
  • Sift flour and baking powder over nut mixture.
  • Add sugar and mix gently until nuts and fruits are well coated.
  • Beat eggs in small bowl until foamy.
  • Spoon in prepared pans and bake 60-70 minutes.
  • Remove from oven adn turn out loaves into wire racks to cool.
  • Wrap in plastic wrap or foil. Keep 4 days before eating, either in frig or freezer.
