Cranberry Loaf

Ingredients
  

  • 1 egg well beaten
  • 1 cup sugar
  • 2 tbsp shortening
  • water
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 orange juice and rind
  • 1 cup cranberries coarsely shopped
  • 1 tsp salt
  • 1 cup nuts chopped

Instructions
 

  • Put 2 tablespoons of shortening in a measuring cup and add enough boiling water to make 3/4 cup.
  • Add the juice and rind of the orange and egg.
  • Blend
  • Add into dry ingredients.
  • Stir only until the flour is dampened.
  • Add nuts and cranberries.
  • Bake at 350° for 60-70 minutes
