Cranberry Loaf
Ingredients
- 1 egg well beaten
- 1 cup sugar
- 2 tbsp shortening
- water
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 orange juice and rind
- 1 cup cranberries coarsely shopped
- 1 tsp salt
- 1 cup nuts chopped
Instructions
- Put 2 tablespoons of shortening in a measuring cup and add enough boiling water to make 3/4 cup.
- Add the juice and rind of the orange and egg.
- Blend
- Add into dry ingredients.
- Stir only until the flour is dampened.
- Add nuts and cranberries.
- Bake at 350° for 60-70 minutes
