Chinese Fried Rice
Ingredients
- ½ pound bacon dice
- 2 cups rice
- 1 cup onion chopped
- ¾ tsp salt
- 1 6 oz can mushrooms undrained
- 2 cups )dried SPAM
- 2 cans chicken broth (or 3 chicken bouillon cubes in 3 cups water)
- 1 can bean sprouts drained
- ½ tsp garlic salt
- ½ cup almonds silvered
Instructions
- Cook bacon crisp – remove bits and all but ⅓ cup bacon fat.
- Add rice and cook over moderate heat til golden brown.
- Stirring constantly, add onion and cook 1 minute.
- Add bacon and remaining ingredients except almonds.
- Bring mixture to boil, reduce heat and cover tightly.
- Simmer 20 minutes until rice is tender and liquid is absorbed.
- Sprinkle with almonds.
