Chinese Fried Rice

Ingredients
  

  • ½ pound bacon dice
  • 2 cups rice
  • 1 cup onion chopped
  • ¾ tsp salt
  • 1 6 oz can mushrooms undrained
  • 2 cups )dried SPAM
  • 2 cans chicken broth (or 3 chicken bouillon cubes in 3 cups water)
  • 1 can bean sprouts drained
  • ½ tsp garlic salt
  • ½ cup almonds silvered

Instructions
 

  • Cook bacon crisp – remove bits and all but ⅓ cup bacon fat.
  • Add rice and cook over moderate heat til golden brown.
  • Stirring constantly, add onion and cook 1 minute.
  • Add bacon and remaining ingredients except almonds.
  • Bring mixture to boil, reduce heat and cover tightly.
  • Simmer 20 minutes until rice is tender and liquid is absorbed.
  • Sprinkle with almonds.
