Ingredients
- 1 cup yellow corn meal
- ½ cup all-purpose flour
- ½ tsp baking soda
- 1 tsp salt
- ½ tsp sugar
- 1 cup creamed-style corn
- 1 medium onion chopped
- 2+ jalepeño chili peppers seeded & chopped
- ¼ pound sharp cheddar cheese finely shredded
- ½ cup olive oil or vegetable oil
- 2 eggs slightly beaten
- 1 cup buttermilk
