Orange Chicken D’veuvre

Ingredients
  

  • 2 cups ground cooked chicken
  • ½ cup fine soft bread crumbs
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 tsp minced onion
  • 1 egg
  • 1 tbsp chicken broth

Orange Sauce

  • ½ cup currant jelly
  • ½ tsp minced onion
  • ¼ tsp tabasco sauce
  • ¾ tsp salt
  • ½ tsp dry mustard
  • ¼ tsp ginger
  • 1 tbsp chopped dill (or 1 tsp dried dill weed)
  • 1 ½ cups orange juice
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions
 

  • Combine all ingredients.
  • Form into balls.
  • Grease cookie sheet and bake for 15 minutes.
  • Serve in chafing dish with orange sauce

Orange Sauce

  • Heat ingredients until boiling.
    ½ cup currant jelly, ½ tsp minced onion, ¼ tsp tabasco sauce, ¾ tsp salt, ½ tsp dry mustard, ¼ tsp ginger, 1 tbsp chopped dill, 1 ½ cups orange juice
  • Thicken with corn starch.
    2 tbsp cornstarch, 2 tbsp water
