Crackle Peanut Brittle

Ingredients
  

  • 2 cups sugar
  • ½ cup water
  • 2 tsp butter or margarine
  • 1 tsp vanilla
  • 1 cup light corn syrup
  • 2 cups salted peanuts

Instructions
 

  • Combine in 2-Quart glass measuring pitcher.
    2 cups sugar, ½ cup water
  • Cook uncovered in microwave 6 minutes on high, or until sugar is dissolved.
  • Stir peanuts into mixture.
  • Cook uncovered in microwave to hard-crack stage (8-10 minutes on high). Stirring twice.
  • Add baking soda and vanilla to mixture; mix well.
  • Pour onto 2 lightly buttered large baking sheets, spreading as thinly as possible.
  • As soon as candy is cool enough to handle, wet hands with water and stretch as thin as desired.
  • Turn candy over and cool completely.
  • When firm and cool, break into medium-sized pieces.
  • Store in a tightly covered container (makes about 2 pounds)
