Refrigerator Bran Muffins
Ingredients
- 2 cups water boiling
- 2 cups 100% All Bran
- 3 cups sugar
- 1 ¼ cup shortening
- 4 eggs beaten
- 1 quart buttermilk
- 5 cups flour
- 5 tbsp soda
- 1 tsp salt
- 4 cups Bran buds
- 1 cup walnuts chopped
- raisins or dates optional
Instructions
- Pour water over all-gran.
- Cream sugar and shortening.
- Add eggs, buttermilk and soaked all-bran.
- Sift dry ingredients.
- Add all dry ingredients at once – mix then immediately add bran buds.
- Add nuts, raisins or dates as desired.
- Bake only as much as needed (batter is thick).
- Bake at 400° for 15-20 minutes
- Keeps well for some time in refrigerator.
