Refrigerator Bran Muffins

Ingredients
  

  • 2 cups water boiling
  • 2 cups 100% All Bran
  • 3 cups sugar
  • 1 ¼ cup shortening
  • 4 eggs beaten
  • 1 quart buttermilk
  • 5 cups flour
  • 5 tbsp soda
  • 1 tsp salt
  • 4 cups Bran buds
  • 1 cup walnuts chopped
  • raisins or dates optional

Instructions
 

  • Pour water over all-gran.
  • Cream sugar and shortening.
  • Add eggs, buttermilk and soaked all-bran.
  • Sift dry ingredients.
  • Add all dry ingredients at once – mix then immediately add bran buds.
  • Add nuts, raisins or dates as desired.
  • Bake only as much as needed (batter is thick).
  • Bake at 400° for 15-20 minutes
  • Keeps well for some time in refrigerator.
