Ingredients
- 3 eggs beaten
- 2 cups white sugar
- 1 ¼ cups vegetable oil
- 2 cups raw carrots grated
- 1 small can crushed pineapple drained
- 1 cup nuts chopped
- 2 tsp vanilla
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp soda
- 3 cups flour sifted before measuring
Instructions
- Mix and pour into greased pan.
- Bake about 1 hour at 350º.

Bishop’s Bread
This makes a pretty bread
Ingredients
- 3 eggs
- 1 cup sugar
- ½ cup Brazil nuts
- 1 bottle maraschino cherries and juice
- 1 ½ tsp baking powder
- 1 ½ cups flower
- ½ cup dates
- ½ cup walnuts
- 1 bar bakers sweet chocolate
Instructions
- Beat eggs, add sugar, flour and baking powder.
- Add all fruits and nuts (whole – do not cut them)
- Bake at 250º-300º for 1 hour and 25 minutes
- Serve with butter.
