Fruit Cake
Ingredients
- ¾ cup shortening
- 1 ½ cups sugar
- 1 cup tomato soup
- ½ cup liqueur
- ¼ cup maraschino cherry juice
- 1 tsp soda
- 3 cups flour
- ¾ tsp salt
- 3 tsp baking powder
- 1 ½ tsp cinnamon
- 1 ½ tsp nutmeg
- 1 pound mixed fruit
- 1 ½ pound dates
- ¾ cup raisins
- ½ cup white raisins
- 1 tsp cloves
- nuts as desired
Instructions
- Cream shortening and sugar.¾ cup shortening, 1 ½ cups sugar
- Combine.1 cup tomato soup, ½ cup liqueur, ¼ cup maraschino cherry juice, 1 tsp soda
- Add to creamed mixture.
- Combine fruits and nuts.
- Add some of the dry ingredients to fruit and nuts to coat.
- Add remaining dry to creamy mixture.
- Add fruits and mix well.
- Bake at 250° about 2 hours.
- Makes 2 large or 4 small cakes.
