Oatmeal Bread

Course Bread

Ingredients
  

  • 4 cups water boiling
  • 2 cups oatmeal
  • ½ cup shortening
  • ½ cup sugar
  • ½ cup molasses
  • 1 tsp salt
  • 1 compressed yeast
  • flour
  • 1 cup raisins

Instructions
 

  • Pour boiling water over oatmeal and let stand until cool.
    4 cups water, 2 cups oatmeal
  • Then add
    ½ cup shortening, ½ cup sugar, ½ cup molasses, 1 tsp salt, 1 compressed yeast
  • Make a soft sponge by adding flour
  • Let rise 2-3 hours.
  • Kneed hard by more flour and raisins
  • Let rise again and make into 3 loaves.
  • Bake slowly in 325° oven for 1 hour.

Almond Tea Cakes

Almond Tea Cakes

Course Dessert

Ingredients
  

  • 2 cups butter or oleo
  • ¾ cup sugar
  • ¾ cup packed brown sugar
  • 2 eggs
  • 4 tsp almond extract
  • 4 cups all purpose flour
  • 1 tsp baking powder
  • milk
  • sliced almonds

Filling

  • 1 egg white
  • ½ cup ground almonds
  • ½ tsp lemon juice

Instructions
 

  • Cream
    2 cups butter or oleo, ¾ cup sugar
  • Add and mix well.
    2 eggs, 4 tsp almond extract
  • Add
    4 cups all purpose flour, 1 tsp baking powder
  • Dough will be soft.
  • Chill

FIlling

  • Stir in a small bowl
    1 egg white, ½ cup ground almonds, ½ tsp lemon juice
  • Remove a portion of dough at a time from the fridge
  • Place 1 inch ball of dough in a miniature muffing pan, pressing slightly into sides and bottom.
  • Place ½ tsp filling in each one.
  • Cover with a quart size circle of dough.
  • Brush with a little milk and top with an almond.
  • Bake at 350° for 20-25 minutes or until golden.

Sugar & Spice Coffee Cake

Sugar & Spice Coffee Cake

Ingredients
  

  • 2 cups flour
  • ¾ cup sugar
  • 3 tsp baking powder
  • ¾ cup milk
  • ¾ tsp salt
  • 6 tbsp soft oleo
  • 1 egg beaten

Topping

  • 2 tbsp flour
  • 2 tbsp melted oleo
  • 2 tsp cinnamon
  • ½ cup chopped nuts

Instructions
 

  • Sift together
    2 cups flour, ¾ cup sugar, 3 tsp baking powder
  • Cut in oleo and add beaten egg and milk mixing lightly.
    6 tbsp soft oleo, 1 egg, ¾ cup milk
  • Spread ½ batter in a greased baking dish.
  • Sprinkle ½ topping on the batter.
  • Then put the rest of the batter on, then the rest of the topping.
  • This coffee cake may be mixed the night before you wan tit.
  • Refrigerate and bake the next morning.
  • Bake at 375° check in 25 minutes.
