Peanut Butter Cookies

Henry Grunewald loved peanut butter cookies, and this is the recipe Liz Loescher would use to bake cookies for when he visited. The quantities are a double batch, since she always made this amount for him.

Cook Time 1 hour
Total Time 2 hours 30 minutes

Ingredients
  

  • 1 pound butter
  • 1 c Shortening
  • 2 c peanut butter
  • 2 c sugar
  • 2 c brown sugar packed
  • 4 eggs
  • 1 ½ tsp baking powder
  • 3 tsp soda
  • 1 tsp salt
  • 5 c flour

Instructions
 

  • Cream butter and sugars
  • Mix in eggs
  • Combine dry ingredients and mix in
  • Chill dough for 1 hour
  • Roll into balls, dip a fork into sugar and press the ball with a criss-cross pattern
  • Bake @ 375° 12-14 minutes

Ingredients
  

  • 1 c powdered sugar
  • 2 c flour
  • 1 c butter
  • 1 egg or 2 egg yolks
  • 1 tsp. Cream of tartar
  • 1 tsp. soda mixed in 1tsp. sweet cream (whipping cream)
  • 1 tsp almond
  • 1 tsp. vanilla

Instructions
 

  • Mix – Chill – Rollout- cut
  • Bake@ 350°

Bourbon Balls

Bourbon Balls

Servings 50 balls

Ingredients
  

  • 1/2 lb vanilla wafers 2 1/2 Cups Crushed
  • 1 cup powdered sugar
  • 2 tbsp cocoa
  • 1 cup chopped pecans
  • 1/4 cup light corn syrup
  • 1/4 cup brandy bourbon or rum

Instructions
 

  • Crush vanilla wafers.
  • Add powdered sugar, sifted with cocoa.
  • Add chopped pecans and mix well.
  • Stir in syrup and brandy.
  • Roll into small balls, coating hands with additional powdered sugar.
  • Let stand about 1 hour to dry slightly.
  • Roll in powdered sugar
