Course Appetizer

Ingredients
  

  • 1 8 oz Philadelphia cream cheese
  • ½ cup sour cream
  • ½ cup olives (with pimentos) chopped
  • ¼ cup bacon crumbled
  • salt and pepper

Instructions
 

  • Blend on medium speed until smooth and creamy.

Green Pepper Jelly

Green Pepper Jelly

Course Appetizer

Ingredients
  

  • 6 large green or red peppers
  • 1 tsp diced red pepper (scant)
  • 6 cups sugar
  • 1 cup cidar vinegar
  • 1 bottle liquid pectin
  • ½ tsp salt

Instructions
 

  • Osterize (blend)
    6 large green or red peppers, 1 tsp diced red pepper (scant), 1 cup cidar vinegar
  • Pour into 10qt dutch oven.
  • Add
    6 cups sugar, ½ tsp salt
  • Bring to a boil and cook 2 minutes.
  • Add and boil vigorously for 1-2 minutes
    1 bottle liquid pectin
  • If desired, add green food coloring fo rdesired shade of green.
  • Pour into jars and seal with paraffin.

Notes

Makes 6 half-pints.  This is good for snacks served on crackers, cheddar cheese & jelly or crackers creamed cheese & jelly or on meats.  (Dried red peppers optional)

BBQ Ham Bites

BBQ Ham Bites

Ingredients
  

  • 1 cup soft bread crumbs
  • ¼ cup milk
  • 1 egg
  • 1 tbsp green onion chopped
  • 1 dash pepper
  • 3 cups ground ham cooked
  • 1 13 ¼ oz can Pineapple tidbits

Honey Glaze

  • ¼ cup brown sugar
  • 2 tbsp cornstarch
  • 2 tsp chicken bouillon granules
  • 1 tsp dry mustard
  • ½ cup honey
  • cup vinegar

Instructions
 

  • Combine and mix thoroughly.
    1 cup soft bread crumbs, ¼ cup milk, 1 egg, 1 tbsp green onion, 1 dash pepper, 3 cups ground ham
  • Drain pineapple and save the juice.
  • Form mix into balls around pineapple.
  • Put in baking pan and pour honey glaze over all.
  • Bake at 375° for 30 minutes.
  • Serve in chafing dish (makes 80)

Honey Glaze

  • Add water to pineapple juice to make 1 ½ cups.
  • Mix pineapple and water with
    ¼ cup brown sugar, 2 tbsp cornstarch, 2 tsp chicken bouillon granules, 1 tsp dry mustard, ½ cup honey, ⅓ cup vinegar
  • Cook and stir until bubbly.
