Pineapple Cake
Pineapple Cake
Ingredients
- 2 cups flour
- 1 ½ cups sugar
- 2 tsp soda
- 1 pinch salt
- 1 large egg (or 2 small eggs)
- 1 large can crushed pineapple with juice
Frosting
- 1 cup sugar
- ⅔ cups carnation
- 1 stick butter
- 1 tsp vanilla
Instructions
- Mix.2 cups flour, 1 ½ cups sugar, 2 tsp soda, 1 pinch salt, 1 large egg, 1 large can crushed pineapple with juice
- Bake 30 minutes at 350°.
Frosting
- Boil1 cup sugar, ⅔ cups carnation, 1 stick butter
- Add1 tsp vanilla
- Pour over cake while hot.
- (poke holes in cake)

Chocolate Cake
Chocolate Cake
Ingredients
- 1 ½ cups flour, less 3 tablespoons
- 1 cup sugar
- 3 tbsp cocoa (level)
- ⅛ tsp salt
- 1 tsp soda
- 1 tsp vanilla
- 1 tbsp vinegar
- ⅓ cup oil
- 1 cup water
Frosting
- ¼ cup butter
- ¼ cup milk
- 1 cup sugar
- 2 tbsp cocoa
- 1 tsp cornstarch
- vanilla
Instructions
- Sift together on paper then sift into ungreased 8×8 pan.
- Make 3 wells in mixture, pour in vanilla, vinegar, oil.
- Pour water and stir with form until well mixed.
- Bake at 350° for 30 minutes.
Frosting
- Stir and boil 1 minute.¼ cup butter, ¼ cup milk, 1 cup sugar, 2 tbsp cocoa, 1 tsp cornstarch
- Add and beat.vanilla
- Spread on cake.

Fruit Cake
Fruit Cake
Ingredients
- ¾ cup shortening
- 1 ½ cups sugar
- 1 cup tomato soup
- ½ cup liqueur
- ¼ cup maraschino cherry juice
- 1 tsp soda
- 3 cups flour
- ¾ tsp salt
- 3 tsp baking powder
- 1 ½ tsp cinnamon
- 1 ½ tsp nutmeg
- 1 pound mixed fruit
- 1 ½ pound dates
- ¾ cup raisins
- ½ cup white raisins
- 1 tsp cloves
- nuts as desired
Instructions
- Cream shortening and sugar.¾ cup shortening, 1 ½ cups sugar
- Combine.1 cup tomato soup, ½ cup liqueur, ¼ cup maraschino cherry juice, 1 tsp soda
- Add to creamed mixture.
- Combine fruits and nuts.
- Add some of the dry ingredients to fruit and nuts to coat.
- Add remaining dry to creamy mixture.
- Add fruits and mix well.
- Bake at 250° about 2 hours.
- Makes 2 large or 4 small cakes.
